profiles: Add fast path for 'xdg-mime-database' hook.

* guix/profiles.scm (xdg-mime-database): When PKGDIRS contains only one
element, symlink directly to it. Invoke 'update-mime-database' only
when PKGDIRS contains two or more elements, which is less frequent.
